The objective of the Le Cordon Bleu Culinary Arts program is to give students the expertise necessary to enter the food service industry in entry to mid-level positions with continued career advancement potential. Graduates should be prepared for a variety of positions in foodservice operations from prep cooks to personal chefs. Our AAS program combines coursework in three areas: culinary, baking and pastry and management.

If you're seeking a career in the culinary arts, California Culinary Academy offers an intensive program of study leading to an Associate of Occupational Studies (AOS) Degree in Le Cordon Bleu Culinary Arts. This 60-week program can prepare you for various positions at restaurants, hotels, private clubs, resorts, food magazines, and many other culinary related businesses. The curriculum integrates classical and modern culinary techniques with strong kitchen management skills, and will prepare you for professional entry into the food service industry.

Educational Objective: Merge cooking methodology with art to produce extraordinary dishes in our Culinary Arts program. Create mouth-watering hors d'oeuvres and pâtés, gourmet dishes flavored with fresh herbs and exotic spices, hearty breads and fresh salads. Produce artistic displays, such as vegetable carvings, fruit platters and sauce paintings. Sample cuisine from around the world, taste wine, develop menus and learn about nutrition and sanitation. Complete an internship at The Restaurant at the Historic Reserve and other local businesses during the last two weeks of the program to test your new skills.
